Mushroom and Barley Pilaf

Mushroom and Barley Pilaf

Ingredients

  • 2 cup(s) barley (hulled)
  • 4 cup(s) chicken stock (for the barley)
  • 2 each bay leaves (for the barley)
  • 4 tbsp olive oil
  • 2 each medium yellow onions
  • 2 cup(s) frozen carrots
  • 2 cup(s) frozen green peas
  • 8 oz mushrooms - portobello
  • 4 tbsp garlic (minced)
  • 1 each parsley (Italian)

Instructions

Cook 2 cups of hulled barley in a pressure cooker. With 4 tbsp of olive oil, saute onions until clear. Add garlic and mushrooms to saute until mushrooms are cooked. Add carrots and peas to saute along with some water until cooked. Mix sauteed ingredients with barley when both are done cooking, and add parsley. Salt and pepper to taste.
