Delicious savory chips baked for a super healthy snack. Japanese purple sweet potatoes, also known as ube, are a good source of antioxidants, fiber, and vitamins. They are also a good source of anthocyanins, which are plant pigments that give ube its purple color. Anthocyanins have been shown to have a number of health benefits, including: reduced inflammation, protection against cancer, improved heart, eye, and brain health.

Ingredients
- 8 each Japanese Purple Sweet Potatoes (Available at Whole Foods)
- 3 tbsp Olive Oil
- 1.50 tsp salt
- 1.50 tsp black pepper
Instructions
1.) Wash sweet potatoes
2.) Slice into 1/4 inch thick chips with a mandolin
3.) Stir ingredients in a large mixing bowl with 3 tablespoons of olive oil, salt, and pepper.
4.) Bake in preheated oven at 400 degrees for 30 minutes
