Super Veggie Hummus

Based on Bryan Johnsons Super Veggie, but quadrupled and some substitutions.

Super Veggie Hummus

Ingredients

  • 0.75 cup(s) Black Beluga Lentils (3/4 cup of dry (before cooking) lentils)
  • 1,000 g Broccoli
  • 600 g Cauliflower
  • 200 g Shiitake Mushrooms
  • 4 tbsp Garlic (minced)
  • 12 g Ginger Paste
  • 4 each Limes (peeled)
  • 4 tbsp Cumin (ground)
  • 4 tbsp Apple Cider Vinegar
  • 4 tbsp Hemp Seeds
  • 4 tbsp Extra Virgin Olive Oil

Instructions

1.) Boil lentils for 20 minutes

2.) Boil mushrooms, cauliflower, and broccoli for 8 minutes

3.) Peel limes while you wait

4.) Add all ingredients into blender and blend until smooth

5.) Pour into 6 freezer containers (16 oz) I've never tried the chocolate chips as shown in the picture. Doesn't sound like a good combination to me. :)
