Mediterranean Baked Chicken

Ingredients
- 5 lb boneless skinless chicken breasts
- 2 each japanese purple potatoes (diced into 1 inch by 1/2 inch squares)
- 2 each russet potatoes (diced into 1 inch by 1/2 inch squares)
- 2 each red onions (chopped or quartered)
- 2 cup(s) chicken broth
- 2 cup(s) cherry tomatoes
- 1 cup(s) artichoke hearts
- 1 cup(s) sundried tomatoes
- 1 cup(s) kalamata olives
- 4 tbsp olive oil
- 4 each lemons
- 4 tbsp garlic (minced)
- 4 tsp dijon mustard
- 4 tbsp honey or maple syrup
- 2 tbsp dried oregeno
- 3 tsp paprika
- 1 tsp salt
- 1 tsp pepper
Instructions
1.) Create marinade and marinate overnight:
5lbs chicken breasts
1/2 cup lemon juice
6 tbsp garlic, minced
4 tbsp Dijon mustard
4 tbsp honey or maple syrup
2 tbsp dried oregano
3 tsp paprika
4 tbsp olive oil
1 tsp EACH salt and pepper
2.) spray large casserole dish with cooking spray
3.) add chicken to bottom of dish so it does not get dried out.
4.) add all veggies except tomatoes on top of chicken
5.) pour marinade into dish
6.) bake at 350 degrees for 30 minutes
7.) add tomatoes and bake another 20 minutes
Chicken internal temp should reach 165 F degrees or more.
