Chicken Soup

Hearty and delicious chicken soup with lots of veggies.

Ingredients
- 2 lb boneless chicken breasts
- 64 oz chicken broth
- 1 each yellow onion (diced)
- 2 cup(s) diced carrots (I used 1 whole bag of frozen carrots.)
- 1 cup(s) frozen peas (I used a whole bag)
- 2 cup(s) broccoli (I used a large fresh head which was more like 4 cups!)
- 4 clove(s) garlic (or 4 tablespoons of diced garlic)
- 28 oz diced tomatoes (2 regular cans)
- 2 tbsp italian seasoning
- 2 tsp salt
- 2 tsp black pepper
- 2 tbsp olive oil (for sauteing garlic and onions)
Instructions
Add olive oil, garlic, and onion to the Instant Pot. Cook on sauté for 5 minutes.
Add raw chicken, vegetables, diced tomatoes, seasonings, broth, and water.
Close and lock the Instant Pot and cook on the soup setting.
When the Instant Pot signals it is finished cooking, allow the Instant Pot to depressurize.
Open the Instant Pot carefully and remove the chicken breasts.
Shred the chicken and add it back to the soup.
Serve hot, garnish with fresh cilantro or basil.
I changed to do the following:
1.) Cut up a whole Costco rotisserie chicken and add it after cooking the veggies. No cooking necessary for the chicken.
2.) I used 1 block of broccoli frozen, and 6 cups of mixed frozen vegetables
3.) I added 4-6 stalks of chopped celery, sauteed, since I had them.
Add raw chicken, vegetables, diced tomatoes, seasonings, broth, and water.
Close and lock the Instant Pot and cook on the soup setting.

Open the Instant Pot carefully and remove the chicken breasts.
