Dahl with Spinach

Delicious coconut dahl with spinach.

Ingredients
- 1.50 cup(s) red lentils
- 3.50 cup(s) water
- 0.50 tsp salt
- 0.50 tsp turmeric powder
- 0.50 tsp chili powder
- 1 lb spinach
- 2 tbsp olive oil
- 1 each yellow onion (chopped)
- 1 tsp cumin (ground)
- 1 tsp mustard seed
- 1 tsp garam masala
- 1 can(s) coconut milk
- 1 can(s) diced tomatoes
Instructions
1.) Rinse lentils and soak for 20 minutes.
2.) Boil water, lentils, salt, turmeric, and chili powder for 15 minutes.
3.) Chop the onion and saute with olive oil and mustard seeds until onions are transparent and seeds pop to release their flavor. In the last few minutes of this, add the cumin.
4.) Add sauteed onions to the lentil pot.
5.) Add diced tomatoes to the lentil pot.
6.) Chop spinach and add to the lentil pot, stirring often and cook for 5 more minutes.
7.) Add garam masala and coconut milk to the pot and cook until heated through.
8.) Serve over brown rice or barley.
